Set in a 19th-century complex that was once home to the city’s French Hospital, the Jaffa combines gorgeous historical architecture with suave contemporary design. Its attractive hilltop location promises dazzling views of the ancient port and the sea beyond, while the up-and-coming Jaffa neighbourhood means that fabulous dining, entertainment and nightlife is virtually right outside the door.

Designer John Pawson is responsible for the hotel’s stylish interiors, and his trademark minimalist aesthetic is evident throughout. We love the way his design highlights the original (and meticulously restored) Neo-Renaissance features – think vaulted ceilings, arched colonnades and stained glass windows – while supplementing with contemporary masterpieces from the likes of Damien Hirst.

The interior design found in the guest rooms is equally impeccable. 120 rooms and suites are split between the historic and contemporary wings – choose whichever atmosphere you fancy and rest assured that both wings are splendid. The primary difference between the wings is the architecture (historic wing rooms have those divine lofty ceilings and equally towering windows), but all rooms share an elegantly restrained palette of neutral shades, sleek designer furniture and gorgeous floating beds. Botanical artwork adds an earthy charm, and views overlook the city, pool, garden or the sea; we recommend booking one with vistas of the water, given that the Mediterranean Sea is less than 500 feet away.

Giardino Restaurant is only open for dinner, and you’ll need reservations, so be sure to plan ahead if you’re looking forward to trying its popular Mediterranean cuisine. For something more casual, head to Golda’s for a deli-style selection of local favourites like falafel, hummus and shawarma, plus international options like hamburgers, salads and pasta dishes. It’s a perfect place to start your day with breakfast (or weekend brunch) out in the courtyard, but if you’re looking for afternoon tea, you’ll find it served in the former hospital’s serene chapel.

The hotel’s 24-hour fitness centre is strikingly (almost shockingly) modern when compared with the rest of the hotel: we love the ink-black walls, panelled mirrors and whimsical line drawings. There’s an outdoor pool if you’d prefer to exercise by swimming laps and an utterly fabulous spa. The L. Raphael Beauty Spa is an urban oasis offering everything from bespoke massages to mani-pedis in an oh-so-artsy environment.
