All are sanctuaries of calm, with interiors set in pale shades of cream and ivory complemented by pretty wood and accents inspired by the natural world outside. Some suites gaze out at the mountains, while others feature views over the rural farmland. Upgrade from a Loft Suite to a Lodge Suite to enjoy a bluestone fireplace, an idyllic reading nook and a pretty private terrace from which to soak in the views. The lodges – one of which features one bedroom, the other two – offer the utmost in privacy. Enveloped by nature, they feature an abundance of extra space and either a private jacuzzi or infinity pool.
Modern Australian cuisine takes centre stage at The Peak, which is the lodge’s elevated restaurant. A love letter to Australian gastronomy and to the country at large, The Peak utilises a spectacular selection of locally sourced ingredients in its seasonal menus. Delights may include dishes such as cured kangaroo, red claw yabby or ‘battered Humpty Doo barramundi’, and the menu is complemented by a superb wine list of bottles from both near and far. Breakfast may be taken here as well, and features an assortment of familiar comforts with a local twist: think sweetcorn fritters with avocado salsa, or smashed avocado on sourdough with whipped feta and house-made pickles.
Spa Anise is a must-visit for whatever you find yourself in need of – whether that’s a hot stone massage, a dip in the plunge pool, or merely unwinding by the open stone fireplace in the relaxation lounge. When you're ready for a bit of adventure, you'll find no shortage of things to do. From exploring ancient volcanic rock formations and bat caves in Millar Vale Creek, to bushcraft experiences, helicopter rides and mountain biking, there’s something to suit every guest. If you’d rather stay put, you’ll have plenty of options, from gin appreciation courses and wine and cheese tastings to art tours and yoga classes, plus complimentary canapés by the campfire in the evenings.
