Underfloor heating, daybeds on the balcony and sunken lounge rooms warmed by gas fireplaces encourage guests to cosy up, converse and unwind.
The best of South Australia's food and drink takes centre stage in Sequoia's dining scene, which is helmed by Chef Nicolas Reverte. Contemporary Australian dishes are created with supremely fresh, locally sourced ingredients for all meals of the day, which can be enjoyed in the beautiful Sequoia Lounge or in the privacy of your own suite. Should you wish to dine out in the grounds, staff will pack you a picnic hamper before sending you on your way. Picnic baskets might include delights such as housemade focaccia sandwiches with burrata, prosciutto and macadamia pesto, smoked salmon sandwiches and Quiche Lorraine, while the more traditional sit-down dinners boast menus featuring prime steak and seafood dishes, caviar and plenty of Coffin Bay oysters. The wine list, needless to say, is spectacular. Should you be interested in a change of environment, guests of Sequoia also have access to other venues on the Mount Lofty Estate, including Hardy’s Verandah Restaurant and Martha Hardy’s Kitchen.
There is plenty to do both off the property and on it, from guided nature walks and koala interactions to stargazing and the aptly named ‘Bee Experience', in which guests suit up to learn about beekeeping hands-on. Back at the hotel, take a yoga class in the morning, a dip in the infinity pool overlooking Piccadilly Valley in the afternoon, and unwind with a session in the infrared sauna or a trip to the Gatekeeper’s Day Spa. There are also opportunities for mixology classes, winemaker meetings and discovery experiences showcasing South Australian cheese and wine.
