Later in the day, visit Gayza restaurant for a fabulous assortment of Moroccan classics reimagined with a splash of French influence. Menu highlights include sea bream fillet, foie gras mille-feuille and the riad’s famous quail and almond Moroccan pie. By the pretty pool, you’ll find Gayza Le Bar, which offers a tea-time menu alongside a variety of Moroccan and international wines. Be sure to take every opportunity possible to head up to The Rooftop, which holds the distinction of being the highest point in the medina and offers absolutely spectacular views over the thousand-year-old city, the military fortifications and the mountains Tghat and Zalagh (considered the guardians of the city). Visit in the evening to enjoy the sunset alongside tapas and cocktails.
Back inside, the Christophe Pillet-designed spa – The Spa Riad Fès by Cinq Mondes – features two hammam cabins and a relaxation room alongside its treatment rooms and menu of indulgent offerings.
