Wherever you say, you can expect lovingly designed interiors that draw their inspiration from both art and the natural world. Organic materials abound – most especially in the form of eye-catching natural wood – and that earthy ambience is given a modern edge thanks to features like concrete accent walls and sleek bathrooms. Decor is very much pared down, but the spaces are far from boring; superfluous decoration is replaced by carefully chosen artworks, bold mirrors, beautiful lighting fixtures and pops of gentle colour here and there. Most fabulous of all are the views that look out over the vineyards and Cordón del Plata mountain range. Snag one of the accommodations that include a private balcony to make the most of the colourful landscape, but if you’re unable to, fear not: rooms without outdoor spaces still feature large bow windows for soaking in those fabulous vistas.
Wine – needless to say – is a massive highlight of the hotel, and no stay at the hotel would be complete without a visit (or two, or three) to the property’s winery. As architecturally bold and eye-catching as the hotel itself, the Casa de Uco winery fuses cutting-edge science and a profound commitment to the environment with the time-honoured tradition of winemaking. As stellar as the wine is, the food should not be overlooked. Casa de Uco’s own organic vegetable garden supplies many of the ingredients in the hotel’s farm-to-table gastronomy, and those which are not grown on site are sourced locally. The result is sublime: a memorable dining experience that is entirely crafted by Echo Valley.
